How it Began. Linda, owner of Via Linda Catering, has not always been in the food industry. She has, however, always loved to cook and entertain, both of which she’s always been good at it.
Linda is originally from Northern California where she took cooking lessons from Linda Ferrari beginning in 1995. She started catering “on the side” for friends and family, as well as making custom cakes since the early 90’s. At that time Linda was in the mortgage business.
After working in the mortgage business for years, she grew tired of working in that capacity. Plus, Arizona had a great hockey program, and her son Adam was a great hockey player. So the mother-son duo moved to Arizona in 2001 to just “chill out for a year.” After Linda became bored, she found the Cordon Bleu Culinary School and decided to attend the school over the next couple of years. When she graduated from culinary school, she realized that, as a single mother of a 16-year-old, working as a chef from 3:00 in the afternoon until midnight just wouldn’t work. So Linda went back into the mortgage lending business, using her catering skills to build business and for meetings and thank-you gifts when people purchased houses. She would cater housewarming parties and similar events.
In the meantime, Adam got a job at the Troon Country Club after graduating high school. He moved his way into their kitchen and started to love working in that capacity. He later went to work at a very busy major restaurant near the ballpark. That was a very high-volume kitchen and Adam ended up running it for a couple of years. He also kept advancing his career. He was on the startup staff at Welcome Diner and Welcome Chicken and Donuts, both cool vibe modern eateries downtown. He also did startups in Flaggstaff and eventually attained the status of executive chef. About the time Linda was interested in buying an existing café/corporate catering company, her son got laid off. So it was perfect timing—almost!
Covid Challenges: Just 3 weeks after purchasing the business, the café was shut down by COVID, and people stopped going to work, bringing the corporate catering to a screeching halt. Due to this, it has been a great struggle through the first year. Instead of being defeated, they focused on what was good, their food, and they developed the take home dinner menu. They saw an opportunity to develop a menu of ready to eat dinners and started selling these to local residents who are tired of their own cooking, and or who felt unsafe or have a difficult time shopping.
Via Linda Catering is now ready to go full steam ahead with executive chef Adam Flynn and classically trained chef Linda in the kitchen. You’ll get a fresh, delicious meal—each and every time!
Via Linda Catering Offerings. In addition to catering, Via Linda Catering also offers family meals to-go every single night, which is a really popular offering. What’s more, they cater private parties, such as those occurring more frequently in backyards across the area. They’ll also do wedding of about 100 people, as well as Covid-compliant corporate events. Breakfast orders are also starting to become popular at Via Linda Catering. Additionally, a lot of pharmaceutical sales reps take Via Linda Catering lunches into offices while they discuss their product or device and teach people how to use it.
