Know Your Baker. Proof is a cottage bakery in Mesa, Arizona, and specializes in Old World artisan breads and pastries. Their products are made by a small group of passionate bakers. Everything they make is hand-mixed, naturally leavened, and baked fresh.

Menu. At Proof, you’ll find a variety of fresh-baked goods, from bread and pastries to artisan rolls.

Local Grains. Proof has a relationship with their local stone mill. This age-old process does not heat up flour like a roller mill, thus preserving nutrients and eliminating the need for later “enriching.” Proof’s most important ingredient is sourced locally and milled with passion at Hayden Flour Mills.

Saturday Offerings. Proof can be found each Saturday at markets throughout the Phoenix Valley. You can pre-order for the week anytime between Tuesday and Thursday. When you pre-order, Proof will pre-package your order fresh out of the oven, and send it to the market of your choosing. On Saturday, you then simply walk up to the pre-order table, and ask for your order. When you pre-order, you’ll have little to no waiting time and avoid the chance that your favorite product will be sold out. Since Proof needs to plan out all of their sorting before their Friday night bake, Friday pre-orders are not available.

Meet the Owners: In 2016, Proof owners Jonathan Przybyl and Amanda Abou-Eid, set out to find great bread in the Phoenix area where they live. Jon, who is Polish, was always around excellent bread in Europe. The pair went to Gilbert Farmers Market and stumbled upon Proof when it was run by the original owner, Jared, who opened the business in 2014. Jon and Amanda became loyal, regular Proof customers. Jared made a few “colossus” loaves, which were very similar to the Polish loaves. They stayed fresh all week, and Jon and Amanda would purchase these loaves weekly.

In 2017, Jon took another trip to Poland. He came back one Friday and couldn’t wait to go to Farmers Market the next day. When Jon got there, he found out that Jared was moving and that he and Amanda wouldn’t be able to get the bread that they loved any longer.

By the following Wednesday, Jon had bought the business from Jared and apprenticed for three weeks before taking over the reins. Jon and Amanda decided to reduce their restaurant business and concentrate on Farmers Markets. They can be found at 6 markets each week, where over 2,000 items are made and sold per week.

The Business Grows. In the first six months of business, instead of using commercial white flour, Jon and Amanda started working on sourcing amazing local ingredients like DNA chocolate and flour from the Haden Flour Mill. So now they were making naturally leavened, whole grain breads. Proof is one of the only bakeries doing this.

In 2018, Jon and Amanda started upgrading equipment and began growing the business. Investment in new equipment has allowed them to go from producing 8 loaves an hour to 96 loaves per hour. They also bought a new dough sheeter that enables them to make 81 layers of dough/butter croissants. Jon and Amanda have over 800 customers every Saturday, and most are regulars. In the past two years, they’ve seen an eight-fold growth in business.

Jon and Amanda also helped launch Mesa Farmers Market and Flea. It’s small and quaint, but has everything you need. Shoppers will find lots of locally sourced, grown, and made products.
